Привет! Я тут подумал что стоит порадовать домашним пуншом детей и решил поделится с вами б/алкогольной вариацией) А то взрослые будут ходить с бокальчиками игристых коктейлей а малышам же что?) Надеюсь вам пригодится:

Эклеры с кофейно-банановым кремом и кокосом - Eclairs with coffee-banana cream and coconut

Добрый день! сегодня будем готовить эклеры - вкусные ароматные и очень настроенческие. Ремейк старого рецепта из блога вашему вниманию:

[english version]Good day! Today we’ll cook eclairs – delicious, flavored and with a special spirit. The remake of an old recipe from my blog is here to your attention:

125 g butter
200 ml water
pinch of salt
200 g flour
3-4 eggs

4 egg yolks (or 2 eggs)
4 tbsp sugar
1 tsp vanilla extract
1 tsp cinnamon
2 tbsp flour
125 ml strong fresh brewed espresso
125 ml milk
100 g butter
2-3 tbsp powdered sugar
1 large banana
100 g coconut flakes
100 g of chocolate

To prepare the dough: put butter in a saucepan with a thick bottom, pour water in it. Add a pinch of salt, put on heat and bring to boil. Pour a 1 cup of flour in boiling water and quickly stir with a wooden spoon or spatula. Remove the saucepan from the heat, cool the dough to 70C, and then break 3-4 eggs one by one into it. The finished dough after kneading should be sticky and smooth.
Fill in pastry bag with dough. Squeeze the dough in a way to get tubes (10-11cm long) on 2 baking sheets covered with baking paper and greased with vegetable oil.
Bake the eclairs in a preheated to 180 C oven for 25 minutes, then reduce to 160C and bake for another 20-25 minutes. It’s not recommended to open the oven during baking.

Prepare cream:
Mix flour, eggs and sugar with a little milk in a saucepan, then dilute with remaining milk and coffee, add cinnamon and vanilla. Put saucepan on medium heat and cook stirring until thick. Let it cool covered with food film.
Beat butter with powdered sugar and gradually add the cooled cream by 1 tbsp. Chop banana in a blender and add 3-4 tbsp of its puree in a cream. Mix and allow standing in the fridge for a couple of hours.
Fill the confectionery syringe with cream.
Fill the eclairs with cream. Melt the chocolate. Pour the eclairs with melted chocolate and sprinkle with coconut.
Ready eclairs put into the fridge for 2 hours.
